Marshmallow Fondant

  • 16 oz (one bag) white mini-marshmallows (good brand)
  • 2 to 5 tablespoons water
  • 2 pounds (4 cups) icing sugar
  • 1/2 cup Crisco shortening

Preparation

Step 1

Melt marshmallows and 2 tablespoons of water in the microwave. Place the bowl in the microwave for 30 seconds, take out and stir. Put back in for 30 more seconds and take out and stir. Continue this until melted (usually about 2.5 minutes total).

Step 2

Place 3/4 of icing sugar on top of the melted marshmallow mix. Grease hands and countertop generously with Crisco and dump the marshmallow mixture onto the countertop.

Step 3

Knead like bread dough. Add the rest of the sugar and knead some more. When the fondant starts sticking, re-grease hands and counter. It usually takes about 8 minutes to get a firm and smooth elastic ball so when it is stretched, it doesn't tear (if mix tears easily, add water (1/2 tablespoon at a time).

Step 4

Coat the dough in Crisco, double wrap the fondant in plastic-wrap, and place in a Ziploc bag. Let it sit overnight in the fridge.

Step 5

When ready to use the fondant, sprinkle a bit of cornstarch on the counter to help prevent sticking.
Microwave the fondant for 10 seconds at a time until the dough reaches body temperature.

Step 6

Now is the time to add food coloring if desired. Add small amounts at a time, and knead it in.

Step 7

Pre-shape your fondant into the shape of the cake (disk shape for round cake). Lightly rub cornstarch on the surface of the rolling pin and roll out the desired size. Roll until 1/8'' thick.

Step 8

Roll fondant onto rolling pin like fabric. Quickly place the fondant at one bottom edge of the cake and unroll the rolling pin and let fondant fall into place. Allow for a bit of overhang. Trim the edges as needed with a pizza cutter - hold it at a 45 degree angle from the cake board and go slow!

Step 9

If there are any bubbles, use a small pin to poke a tiny hole. Poke it at an angle to make it less noticeable.
