Shepherd's Pie

This is a good hearty meal on a cold evening- makes 2-4 servings, usually with leftovers. Great reheated.

Ingredients

  • 1 lbs ground Italian sausage (my favorite), ground beef, ground turkey or ground veal
  • 1 can mixed vegetables- or small can of corn and small can of peas
  • Mashed potatoes (4oz packet of instant which equals about 3 cups prepared)
  • 1 can Cream of Mushroom Soup (or 1 jar gravy)
  • 1 packet of Onion Soup mix (optional)
  • Seasonings to taste- Garlic Powder, Salt, Pepper, Italian Seasoning, Chili Powder, Etc.
  • Butter- 1/2 stick melted

Preparation

Step 1

Prepare mashed potatoes. Can used left-over mashed potatoes, or can use instant potatoes.

Step 2

Drain canned vegetables.

Step 3

Brown ground meat in a large skillet until no longer pink. Drain.

Step 4

Add canned vegetables, cream of mushroom soup (don’t add water), 1/2 packet of onion soup mix, and spices to skillet with meat.

Step 5

Stir mixture until cream of mushroom soup coats ingredients evenly.

Step 6

Transfer mixture to a glass or metal baking dish. Top with other 1/2 packet of onion soup mix, and seasonings to taste. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks that will brown nicely. Drizzle melted butter over the top.

Step 7

Cook in 400 degree oven until bubbling and brown (about 30 minutes). Broil for last few minutes if necessary to brown. (Only broil if using a metal baking dish.)
