Spanish Rice

This is a great side dish for Taco night, or add chicken and make it a dinner all by itself.

Ingredients

  • 1 cup white rice
  • 1 can stewed tomatoes (drained and separated- keep the liquid)
  • 1/2 stick of butter
  • *Optional* 1 or 2 cooked boneless skinless chicken breasts (shredded or cubed)

Preparation

Step 1

Melt butter in a saucepan. Add rice. Cook on medium heat until rice is browned.

Step 2

Add enough water to stewed tomato liquid to make 1 3/4 cup liquid.

Step 3

Add stewed tomatoes, tomato juice/water mixture to rice. Bring to a boil. Cover and reduce temp to low. Stir every 5 or so minutes. Cook for 20 minutes, or until rice is tender and liquid is gone.

Step 4

*Optional- Add chicken.*
