Homemade Cinnamon Rolls

Once you try these homemade-from-scratch cinnamon rolls you will never again want to buy the store bought ones. These will come out of your oven hot and gooey and oh so wonderfully delicious.

Ingredients

  • 1 package of fast-rising yeast
  • 6 tablespoons plus 1/2 teaspoon white sugar, divided
  • 1/4 cup hot water
  • 6 tablespoons butter (or margarine)
  • 3-3 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup plus 2 teaspoons milk, divided
  • 1 egg
  • 1/4 cup finely chopped almonds (optional)
  • 1/4 cup packed brown sugar
  • 1 tablespoon cinnamon
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla

Preparation

Step 1

In a cup, combine the yeast and 1/2 teaspoon of the white sugar. Add the hot water and stir; let stand until foamy (about 5 minutes). Combine 1 1/2 cups flour, 4 tablespoons white sugar and salt in a large mixing bowl.

Step 2

Melt the butter. Using an electric mixer set on a lower speed, beat in 1/2 cup milk, 3 tablepsoons butter, the egg and the yeast mixture. Turn the speed up to medium on the mixer and beat for an additional 2 minutes. Stir in 1 1/2 cups of flour until a soft dough forms.

Step 3

Knead the dough with your hands until it is smooth and elastic-like (about 10 minutes), adding the remaining flour as needed. Cover; let sit for 10 minutes. In a smaller bowl, combine the remaining white sugar, the almonds (if you choose to use them), brown sugar and cinnamon. Roll the dough out into a 12 X 10 -inch rectangle. Brush with most of the remaining butter and sprinkle the brown sugar and cinnamon mixture all over the top.

Step 4

Roll the dough up tightly to form a "log". then cut the rolled dough into 8-12 slices, depending on how big and/or thick you want your cinnamon rolls to be. Place the slices into a square baking dish. Brush the cinnamon rolls with the remaining butter. Cover; let the rolls rise in a warm place for 30 minutes.

Step 5

Heat the oven to 350 degrees and bake the rolls for 20 minutes. Cool briefly. Mix the powdered sugar, vanilla and remaining milk and drizzle this mixture over the top of the warming rolls.

To aid the cinnamon rolls in rising to perfection, put the pan with the cut rolls in a 200 degree oven for 1 minute. Turn the oven off and the let the buns rise for 30 minutes, or until the rolls have nearly doubled in size.
