Ingredients
- 1 tbsp garlic, minced
- 1 sweet onion, chopped
- 2 carrots, chopped
- 3 celery sticks, chopped
- 10 mushrooms, chopped
- 1 cup green beans, cut 1 inch lengths
- 3 red potatoes, cubed
- 1/2 tbsp salt
- SAUCE
- 1 tsp thyme
- 1/2 tsp salt
- 1 tsp pepper
- 1 tbsp coriander
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 2 tbsp molasses
- 1/4 cup tomato paste
- 1 cup red wine
- 2 1/2 tbsp Dijon mustard
Preparation
Step 1
Saute mushrooms, onion, and garlic until caramelized. Fry potatoes in a separate pan until crispy.
Step 2
Add remaining vegetables to onions, cook 4 minutes. Add sauce ingredients, simmer 30 minutes.
Step 3
Add potatoes 2 minutes before serving. Serve with homemade bread.
