Parmesan Garlic Roasted Potatoes 1 Picture

Ingredients

  • Potatoes cut in to smaller size pieces (I use Red Potatoes)
  • A few tablespoons of olive oil
  • 2-3 cloves garlic, minced
  • 1 to 2 Tablespoons fresh chopped parsley
  • Fresh grated Parmesan cheese
  • Salt and pepper, to taste

Preparation

Step 1

Preheat oven to 450 °F.

Cut potatoes into cubes or wedges. Bring a pot of water to a boil.
Add the potatoes and cook for 3 to 6 minutes depending on size.

Step 2

Heat olive oil in a large pot and put medium batches of potatoes in oil, stirring often.

Make sure potatoes do not get burnt, but get a nice crust on them.

Step 3

While potatoes are cooking, mix together Parmesan cheese, parsley, minced garlic, salt, and pepper.

Remove potatoes from oil and place on paper towels or other absorbent surface. Sprinkle with Parmesan cheese mixture and place on greased cookie sheet.

Step 4

Roast potatoes for 10 minutes or until cheese is a golden brown.

Made sure to not let potatoes burn!
