Ingredients
- 2 cups sugar
- 2 cups vegetable oil
- 1 pkg silk tofu
- 1 1/2 cups coconut milk
- 2 tbsp baking powder
- 1 tsp vanilla extract
- 1 tsp coconut extract
- 2 tsp orange extract
- 1 tsp lemon juice
- 2 cups AP flour
- 4 cups sweetened coconut, shredded
- SYRUP
- 2 cups water
- 2 cups sugar
- 1 tsp vanilla extract
Preparation
Step 1
Boil water, 2 cups sugar, and 1 tsp vanilla extract, 5-10 minutes.
Step 2
Combine dry ingredients. Blend tofu until smooth. Combine wet ingredients. Pour wet ingredients into dry ingredients. Mix well.
Step 3
Preheat oven 350*F for 30 minutes until golden and cook through.
Step 4
Pour syrup over cake.
