This is totally one of those “recipes” that isn’t really a recipe at all and is something I could eat any time of the day.

Ingredients

  • 4 large tortillas
  • 8 eggs
  • 1-2 avocados (optional)
  • 1 bunch cilantro
  • 1 15-oz can black beans, drained and rinsed
  • 1 bunch cilantro, minced
  • 1 Tbsp Cumin or taco seasoning
  • Fiesta blend cheese, shredded
  • Salsa
  • oil or butter to fry eggs

Preparation

Step 1

Melt butter or heat oil in skillet on medium low. Cook eggs as preferred, whether it be scrambled, fried, or whatever. Season with cumin and cilantro.

Step 2

While eggs are cooking, assemble other ingredients and set up an assembly line for burrito assembly.

Once done, spread about 2 T of salsa on tortilla, then layer on black beans, more cilantro, avocado slices, eggs, and cheese.

Roll up tortilla into a burrito, with both ends tucked in.
