Bruschetta Chicken

One of my all-time favorite ways to prepare chicken! The marinaded tomato and mozzarella mixture takes the cake!

Ingredients

  • 1 tablespoon balsamic vinegar
  • salt and pepper, to taste
  • 3 medium vine ripened tomatoes, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh basil leaves
  • 1 tablespoon olive oil
  • 3 ounces part skim mozzarella, diced into 1 inch cubes
  • 4 boneless, skinless chicken breasts

Preparation

Step 1

n a small bowl, mix the olive oil, vinegar, salt and pepper; let set for a few minutes.

Meanwhile, in a large bowl, combine the tomatoes and cheese chunks with the garlic, basil, balsamic combo, then salt and pepper to taste. Set aside for at least 30 minutes and up to overnight (refrigerated).

Step 2

While mixture is marinating, grill chicken in a pan for 10-12 minutes on medium high, or until cooked all the way through.

Step 3

While chicken is still warm, spoon some of the tomato/cheese mixture onto the top of the chicken breast, making sure to dribble some of the liquid onto the top.

Serve warm.
