Buttery Soft Pretzels

Exactly what the title implies: soft pretzels that are deliciously buttery.

Ingredients
- 1 package active dry yeast
- 1 teaspoon white sugar
- 1 1/4 cups warm water
- 5 cups all-purpose flour
- 1/2 cup white sugar
- 1 1/2 teaspoon salt
- 1 tablespoon vegetable oil
- 1/2 cup baking soda
- 4 cups hot water
- 1/4 cup kosher salt, for topping
- 2/3 cup melted butter

Preparation
Step 1
In a small bowl, dissolve yeast in 1 1/4 c warm water. Stir in 1 teaspoon white sugar and let stand until creamy and foamy, about 10 minutes.
Step 2
In a large bowl, mix together flour, sugar, and salt. Make a well in the center and add the oil, yeast mixture, and 4 cups hot water.
Mix and form into a dough. If the mixture is dry, add 1 T of water at a time. If the mixture is too wet, add 1 T of flour at a time.
Knead the dough until smooth, about 10 minutes.
Step 3
Lightly oil a large bowl, place dough in the bowl and turn to coat with the oil. Cover bowl with plastic wrap and let ride in a warm place until doubled in size, about 1 hour.
Step 4
Preheat oven to 325 F. In a large bowl, dissolve bakins soda in hot water.
Turn dough out onto lightly floured surface and roll into several ropes.
Step 5
You can twist the ropes into pretzel shape or you can make thick sticks. Doesn't matter.
Once all the dough is shaped, dip into baking soda/water mixture and place on a greased baking sheet. Sprinkle with kosher salt and bake in oven for 8 minutes or until golden brown.
Step 6
Immediately after removing pretzels from the oven, brush generously with melted butter.
