Ingredients

  • 1 3/4 cup coconut milk
  • 2 tbsp red wine vinegar
  • 1/4 cup vegan margarine
  • 1/2 cup mango vanilla yogurt
  • 3 tsp vanilla extract
  • Red food coloring
  • 2 2/3 cup AP flour
  • 1 cup brown sugar
  • 1 cup sugar
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • FROSTING
  • 1 /2 cup vegan margarine
  • 1 1/2 cup cream cheese
  • 2 tsp vanilla extract
  • 2 cups powder sugar

Preparation

Step 1

Combine all dry ingredients. Combine all wet ingredients. Stir wet ingredients into dry ingredients. Add red food coloring to get desired red.

Step 2

Preheat oven 350*F. Grease cupcake pan. Pour batter into cupcakes. Bake 30-35 minutes until no longer doughy.

Step 3

Beat frosting together. Ice cupcakes when cooled.
