Ingredients

  • 2 eggs
  • 1 banana
  • 1/3 cup almond flour
  • 1/4 cup cocoa powder
  • 1 pinch of salt
  • 1/4 cup organic honey
  • 1/3 cup 70% dark chocolate bar (can be substituted with semi-sweet dark chocolate chips)

Preparation

Step 1

Preheat oven to 350 degrees farenheit.

In a medium sized bowl, mix the dried ingredients: almond flour, cocoa powder, and salt. Lumps may form, so it is important to mix until there are no longer any lumps (it may help to sift the dried ingredients beforehand).

Step 2

In a separate large bowl for wet ingredients, mash the banana. There is no requirement to how mashed it has to be as this is a personal preference. I personally prefer chunky banana bits in the cookie and mash it only 50%.

Once completed, add the eggs and honey into the banana mixture and stir.

Step 3

Pour half the dry ingredients into the bowl of wet ingredients and stir. Once mixed well, pour the remaining half and stir.

Step 4

Separately chop the dark chocolate bar into small pieces, and fold the chocolate into the cookie dough mixture.

Step 5

Spoon two tablespoons of dough mixture per cookie onto a baking tray, and bake for 12-15 minutes.
