Ingredients

  • - 2 cups Flour
  • - 2 tsp Baking Powder
  • - 1 tsp baking soda
  • - 1 tsp Cinnamon
  • - 1/4 tsp Nutmeg
  • - 1 pinch of Cloves
  • - 1/2 tsp Salt
  • - 4 Eggs
  • - 1 1/4 cup oil
  • - 2 cups Sugar or Splenda
  • - 2 cups Carrots shredded
  • - 1 cup Rasins

Preparation

Step 1

Pre-heat oven to 350.
In a large bowl mix flour, baking powder, baking soda cinnamon, nutmeg, cloves, and salt.
In another large bowl mix eggs, oil, and sugar/splenda.

Step 2

Mix together the dry mix with the egg mix, and add carrots and raisins.

Step 3

Pour into greased 8 inch square cake pan. bake for about 45 mins. or until toothpick comes out clean.

- 1/4 cup of crushed nuts can be added if desired.
- to make Icing use - 1 bar cream cheese
- 3 tbsp Butter
- 3/4 cup icing sugar
- 1 tsp lemon juice
