Ingredients

  • 5 lb russet or yukon gold potatoes
  • 1 1/2 cup half and half cream
  • 1 1/2 tsp dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup unsalted butter

Preparation

Step 1

Peel and cut potatoes into largfe even-sized pieces. Place in large pot. Cover with water and bring to a boil over high heat. Reduce heat. Simmer, covered until very tender 25 to 30 min. Drain well.

Step 2

Pour cream into a large measuring cup or small saucepan. Wisk in dijon, salt and pepper. Add butter. Heat in the microwave or on stove top until hot, but not boiling.

Step 3

Place drained potatoes back in pan over warm (but off) burner to evaporate excess moisture. Mash until very smooth. Stir warm cream mixture, then our into potatoes. Fold evenly to mix. Taste and season with more salt if you wish.
