Ingredients

  • corn tortillas
  • 1/2 sweet onion, diced
  • 6 green onions, chopped
  • 2 jalapenos, minced
  • 1 pkg vegan soy pepper jack cheese, shredded
  • 1 md block old cheddar cheese, shredded
  • enchilada sauce
  • ENCHILADA SAUCE
  • 2 Tbsp vegetable oil
  • 2 Tbsp flour
  • 4 Tbsp chili powder
  • 1 tsp garlic powder
  • 2 tsp cinnamon
  • 1/2 tsp cayanne pepper
  • 1 tsp corriander
  • 1/2 tsp salt
  • 2 tsp cumin
  • 1 tsp cilantro paste
  • 2 cups vegetable broth

Preparation

Step 1

Combine all sauce ingredients in a pot, boil 5 minutes.

Step 2

Spread some sauce on the bottom of a greased pan.

Step 3

Put sauce, both cheeses, and both onions in a corn tortilla. Roll tortilla. Repeat.

Step 4

Place rolled tortillas on the sauce in the casserole dish. spread sauce on top. Sprinkle with onions and cheese.

Step 5

Preheat oven 350*F. Bake 30 minutes until cheese is bubbly.
