Ingredients
- Chicken, thinly sliced
- 1 package Chow mein noodles
- Choi chopped
- SAUCE ONE
- 1 ¼ C. Chicken broth
- 3 tbs. Oyster sauce
- 2 tbs. Soy sauce
- 1 tbs. Sugar
- SAUCE TWO
- ¼ C. Water
- 2 tbs. cornstarch

Preparation
Step 1
Mix Sauce One and Sauce Two separately
Step 2
Boil full kettle of water and rinse mein in colander
Step 3
Fry mein and set aside
Step 4
Sauté chicken in sesame oil with a bit of minced garlic and minced ginger
Step 5
Add Sauce One and choi, cook till choi is soft
Step 6
Add Sauce Two
Step 7
Pour over mein

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!
INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
