Ingredients
- Cookies
- 1 cup sugar
- 1/2 cup molasses
- 1/2 cup water
- 1 tbsp ground ginger
- 2 tsp cinnamon
- 1 tsp ground cloves
- 2 sticks unsalted butter, softened
- 4 cups flour
- 1 1/2 tsp baking soda
- 1/4 tsp salt
- Icing
- 1 tbsp meringue powder
- 2 cups powdered sugar
- 4-5 tbsp water
- Food colouring
Preparation
Step 1
To make the cookies: Stir together sugar, molasses, water, ginger, cinnamon and cloves in a large saucepan. Bring to a boil and stir until sugar is dissolved (you shouldn’t be able to feel granules with the back of your spoon). Remove from heat and add butter, stirring occasional until incorporated. Allow to cool for 15 minutes. In the meantime, sift flour, baking soda and salt together in a bowl. Stir in to cooled molasses mixture with a wooden spoon, until combined. Place dough in a large Ziplock bag (or several small ones) and flatten evenly, then refrigerate overnight.
Step 2
The following day, preheat your oven to 375 and line two cookie sheets with parchment paper. Dust your work station with flour, and using a 1/4 of the dough at a time, roll out to 1/4 inch thickness, cut and bake for 8-9 minutes, or until lightly browned. Let cool on racks before icing.
Step 3
To make the icing: Add all ingredients to a stand mixer and beat with paddle attachment for 8 minutes, until smooth. Color and design cookies as desired. Don’t be afraid to give them funny faces, sweaters, or pets.
