Country Minestrone Soup

A tomato based vegetable soup.

Ingredients

  • 2 finely chopped onions
  • 2 chopped large carrots
  • 3 coarsely chopped celery sticks
  • 3 cubed potatoes
  • 4 chunked baby zucchini
  • 1/2 packet of chopped green beans
  • 4 chopped spinach leaves
  • 1/4 cup oil
  • 2 tablespoons butter
  • 4 chicken stock cubes
  • 1 tin whole peeled tomatoes
  • 1 tin crushed tomatoes
  • 1/2 cup tomato paste
  • 1/2 butternut mashed
  • 3 litres boiling water
  • Salt and pepper to taste

Preparation

Step 1

Heat oil and butter in large pot

Step 2

Add onions and cook over a medium heat until golden brown.

Step 3

Add carrots, cook 3 minutes while stirring.

Step 4

Add vegetables and cook slightly.

Step 5

Add stock and war we, tomatoes, parse, salt pepper and seasoning
