  • Carrot,grated1/2 medium
  • Button mushrooms,finely chopped2
  • Cabbage,finely chopped1/4 small
  • Green capsicum1/2 medium
  • Oil1 tablespoon
  • Small onions,finely chopped1
  • Celery,finely chopped2 inch piece
  • Vegetable stock3 cups
  • Saltto taste
  • Dark soy sauce2 tablespoons
  • Green chilli sauce2 tablespoons
  • Crushed black peppercornsto taste
  • Cornflour/ corn starch 2 tablespoons
  • White vinegar1 tablespoon
  • Garlic,finely chopped Substitute: Cloves3-4
  • Sugar1/2 teaspoon
  • Spring onion greens,finely chopped1 stalk

Preparation

Step 1

Heat the oil in a deep non stick pan. Add onion, French beans, carrot, celery, mushrooms, cabbage, ginger, green capsicum and vegetable stock and cook.

Add salt, dark soy sauce, green chilli sauce and mix. Add crushed peppercorns and mix and let the mixture come to a boil.

Mix cornstarch in ½ cup water till smooth and add to the soup. Add ½ tbsp white vinegar and mix. Add garlic, sugar and remaining vinegar and mix well. Add spring onion greens and mix. Serving piping hot.
