Ingredients
- 2 mild italian sausages
- 2 onions
- 6 medium potatoes
- chicken broth to cover
- bag of spinach
- enough milk to make it soup
Preparation
Step 1
cook and crumble sausage meat then REMOVE FROM PAN!
Step 2
cook onions until soft
Step 3
dice potatoes and add to pot, along with chicken broth to cover. cook until potatoes are tender
Step 4
mash or blend with immersion blender to desired consistency
Step 5
chop spinach and add to pot (or use 8 cubes of frozen spinach).
Step 6
add cooked sausage and pour milk in until it's as thin as you want it!
Also good with hot italian sausages (or one of each). Sister Howard uses swiss chard
