Ingredients
- 2 tbsp extra virgin olive oil
- 3 shallots
- 0.5 lb sugar snap peas
- 1 lb washed and sliced asparagus
- 15 oz lima beans
- 15 oz corn kernels
- 1 tsp lemon juice
- 0.5 tsp lemon zest
- 1 tsp salt
Preparation
Step 1
Heat 1 tbsp olive oil on skillet on high heat. Saute shallots until tender and remove
Step 2
Saute snap peas with 0.5 tsp salt until tender
Step 3
Saute asparagus with rest of olive oil and salt as well as the previously-sauteed shallots until the asparagus is tender
Step 4
Add corn and lima beans and stir for 1-2 minutes and then adding lemon ingredients
