Ingredients
- Crust:
- 1 cup finely ground chocolate wafer cookies
- 1 tbsp sugar
- 4 tbsp butter
- Filling:
- 4 tsp instant espresso powder or crushed chocolate expresso beans
- 3 8oz cream cheese
- 1 1/3 cups and 3 tbsp sugar
- 4 large eggs
- 2.5 cups low fat sour cream
- 3 tbsp flour
- 4 oz unsweetened chocolate
- Cocoa powder

Preparation
Step 1
Preheat oven to 325 F
Step 2
Mix together cookie crumbs, 1 tbsp sugar, and melted butter. Press this into bottom of a roasting pan filled with several inches of water to form crust
Step 3
Mix 3 tsp of expresso powder and 2 tsp water to make the expresso mix
Step 4
Beat cream cheese and 1 1/3 cups of sugar until light and fluffy (~ 3 minutes). Add eggs and beat well. Add 1 cup of sour cream and flour and mix well. Stir in expresso mixture and melted chocolate
Step 5
Pour filling mixture from step 4 over the crust. Bake for 70 minutes at 325 F or until the center is mostly set. Turn off oven and let set for 25 minutes
Step 6
Mix 1.5 cups of sour cream with 3 tbsp sugar and 1 tsp expresso powder. Spread mixture over cheesecake after the 25 minutes is over. Let stand in oven for another 5 minutes and then remove
Step 7
Let cool and refrigerate overnight. Garnish by sprinkling cocoa powder on top
