Ingredients
- Salsa
- 1/2 medium pineapple or 20 oz can pineapple slices
- 1/4 small red onion
- 2 T fresh cilantro, chopped
- 1/8 t salt
- 1/2 lime, juiced
- Tilapia
- 1/2 of a 1.25 oz pkt taco seaoning mix
- 3 T olive oil with 1 t crushed garlic
- 4 boneless, skinless tilapia filets
Preparation
Step 1
Heat GRILL pan over medium-high heat 5 minutes. While heating, peel pineapple half; cut lengthwise into 2 pieces and remove core. Slice each pineapple piece lengthwise into 3 strips. Arrange strips in a single layer over GRILL pan; cook 2-3 minute on each side or until grill marks appear. Set aside on cutting board.
Step 2
Meanwhile, chop onion and cilantro. combine with salt and 1 T lime juice.
Step 3
Whisk taco seasoning and oil. Add tilapia, turning to coat. Place 2 fillets in GRILL pan. Cook 2 minutes or until grill marks appear.Turn over and cook 2 more minutes or until fish flakes easily with a fork. Repeat with remaining fillets.
Step 4
While fish is cooking, chop pineapple and add to onion/cilantro mixture. Top tilapia with salsa.
