Ingredients
- 1 tbsp butter
- 4 cod fillets
- 3 tbsp olive oil
- 1 cup bread crumbs (Preferably Panko - Japanese bread crumbs)
- Salt, black pepper and cayenne (to taste)
- 1 lemon
Preparation
Step 1
Preheat oven to 350°F.
Step 2
Lightly brush baking dish with butter/oil.
Step 3
Brush the defrosted/fresh cod fillets on both sides with olive oil. Season with salt, pepper and cayenne pepper to taste.
Step 4
Coat both sides of the fish with bread crumbs (sprinkle them on top).
Step 5
Place the breaded fillets in the baking dish.
Step 6
Bake for 12-15 minutes. Carefully flip over with tongs halfway through.
Step 7
Set your oven to the broiler setting (Medium), until golden brown. Watch closely to avoid burning.
Step 8
Transfer to plate, and squeeze fresh lemon juice over the fillets.
Step 9
Serve with fresh salad and garlic bread.
