Ginger & Shrimp stir fry

Ingredients

  • 1 teaspoon sesame oil
  • 2 tablespoons fresh minced ginger
  • 2 tablespoons seasoned rice vinegar
  • 1 teaspoon fresh minced garlic
  • 1 teaspoon sugar or sweetner
  • 1 small red bell pepper, cut into bite-size pieces
  • 1 cup snow peas ,broccoli,carrots & mushrooms.
  • 1 ½ pounds peeled and deveined large shrimp
  • 2 tablespoons sesame seeds
  • 2 cups cooked brown rice

Preparation

Step 1

Heat oil in a large nonstick pan over medium-high heat. Combine ginger, soy sauce, vinegar, sugar and garlic in a separate bowl. Add vegetables to the pan and stir-fry two minutes or until tender. Add shrimp and stir-fry three minutes or until done. Add soy sauce mixture, and cook one minute. Sprinkle with sesame seeds and serve with brown rice.
