Ingredients

  • About one pound cooked lean ground beef(cooked).
  • 1TBS fresh minced garlic.
  • 1 can low fat mushroom soup.
  • At least one tablespoon of chill powder, I put a little more.
  • About 1/4 teaspoon fresh ground black pepper.
  • 1 12 oz can of kernel corn.
  • 1 cup chopped red and green peppers.
  • 3 cups mashed potatoes.
  • Shredded cheese optional.

Preparation

Step 1

Combine all ingredients except mashed potatoes and half the soup and put in 2 litre baking dish.
Stir remaining soup into potatoes and this is where I add some shredded cheese.

Bake at 400 uncovered until vegetables are tender, about 20 minutes.
Just before done I sprinkle a little shredded cheese on it.

Can use Turkey in place of beef & peas in place of corn for a variety!
