Ingredients

  • 2 1/4 cups flour
  • 1/4 tsp salt
  • 1 cup sugar
  • 1 cup soft butter
  • 2 egg yolks
  • 1 TBS brandy
  • 4 cups finely chopped peacans
  • 1/2 cup packed brown sugar
  • 1 1/2 tsp cinnamon
  • 4 unbeaten egg whites
  • Confectioners Sugar

Preparation

Step 1

Sift flour, salt, and 1/2 cup of sugar.

Step 2

Blend in butter. Add egg yolks and brandy.

Step 3

Pat evenly in a 15x10x1 inch pan. Bake at 350 for 15 minutes.

Step 4

In heavy saucepan, put remaining 1/2 cup of sugar, pecans, brown sugar, cinnamon, and egg whites. Cook, stirring over low heat until sugars dissolve. Increase heat and cook until mixture no longer clings to the sides of the pan.

Step 5

Spread sugar mix over baked mixture.

Step 6

Return to oven and bake for 15 minutes.

Step 7

Remove from oven and cool. Once cool, slightly cut into 3"x1" bars. Dust cookies with confectioners sugar.

Store in airtight container. Can be frozen.
