Ingredients

  • 2 cups sliced strawberries
  • 2 cups fresh raspberries
  • 2 cups fresh blueberries
  • 1 cup fresh blackberries
  • 6 tablespoons superfine sugar
  • 2 boxes (3.4 ounces each) instant vanilla pudding mix
  • 2 all-butter loaf (or pound) cakes (11.5 ounces each)
  • 1/2 cup heavy cream

Preparation

Step 1

In a large bowl, gently mix the berries with 4 tablespoons of sugar and 2 tablespoons of water and set aside. In another bowl, make the pudding according to package directions; set aside. Cut the cake loaves into 1-inch cubes.

Step 2

In a large glass bowl (at least 10-cup capacity), place 2 cups of the cake pieces in a single layer. Next, spread 1 cup of the pudding over the cake pieces. Arrange 2 cups of the berries over the pudding. Repeat with cake, pudding and berries for the second layer. For the third layer, arrange 3 cups of cake pieces, 2 cups of the pudding and then 3 cups of the berries. Cover with plastic wrap and place in the refrigerator for 1 hour to chill.

Step 3

Just before serving, combine the heavy cream and the remaining 2 Tablespoons of sugar in a mixing bowl. With an electric mixer, whip the cream until it's thickened and spoonable. Spread the cream over the top layer of the trifle and serve.
