Classic Hash Browns

Ingredients

  • 2 russet potatoes peeled
  • 3 tablespoons butter
  • 1 pinch cayenne pepper
  • 1 pinch paprika
  • Salt and pepper to taste

Preparation

Step 1

Shred potatoes using a cheese grater, mandoline or food processor. Add to a large bowl filled with cold water, and stir until the water becomes cloudy. Drain, then cover the potatoes with cold water again. Stir to dissolve the excess starch. Drain potatoes well, pat dry with paper towels, and squeeze out excess moisture.

Step 2

Heat butter in a large non-stick pan on medium heat. Combine potatoes with spices, then add them to the pan, spreading them out to cover the whole surface.

Step 3

Cook potatoes until a brown crust forms on the bottom, about 5 minutes. Flip and cook about 5 more minutes until browned on the other side.

Serve!
