Minestrone Soup

Ingredients
- 1 tsp oil
- 1 large onion chopped
- 1 cup celery
- 4 cloves garlic minced
- 4 cups low sodium chicken broth
- 2 cups water
- 1 can tomato paste
- 1 tsp italian seasoning
- 1 tsp pepper
- 1 can (14 oz) red kidney beans rinsed
- 1 cup mushrooms
- 1 cup string beans
- 1 carrot chopped
- 1 turnip chopped
- 1 cup whole wheat pasta

Preparation
Step 1
Saute onions, celery, garlic in a medium pot with oil until tender.
Step 2
Add broth, water, tomato paste, seasoning, and pepper to the onions and garlic. Stir and bring to a boil.
Step 3
Reduce heat to low and cook 10 minutes
Step 4
Add remaining vegetables and pasta. Bring to boil. Reduce heat to low and cook 10 minutes until pasta is cooked.
