Pineapple and Dandelion Wine

Wine is my favorite fruit, and pineapple is a close second. Use those pesky dandelions in an excellent way.

Ingredients
- 1 pineapple
- 12 cups yellow dandelion flowers
- 14 cups water
- 2 lemons
- 4 pounds of sugar
- 1 or 2 packets of yeast
Preparation
Step 1
Pour boiling water over dandelion flowers. Let sit for 5 days, strain.
Step 2
Juice and zest the lemons.
Step 3
Cut the top off the pineapple and cut into small chunks. Save the juice.
Step 4
Combine 2 pounds of sugar, dandelion water, pineapple chunks, lemon juice and zest, and water. Cover and let sit for 12 hours.
Step 5
Add yeast and the other 2 pounds of sugar. Stir.
Step 6
Stir daily until it's done fermenting, then strain and bottle.
Step 7
Let it age until you see dandelions again next year.
