Ingredients

  • 1 cup blueberries
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 3/4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1 large egg
  • 1 cup low-fat milk
  • 1/3 cup pure maple syrup
  • 2 tablespoons canola oil
  • 1/2 teaspoon pure almond extract (or pure vanilla extract)
  • 1 cup rolled oats
  • 3 tablespoons almonds - coarsely chopped

Preparation

Step 1

Preheat oven to 350F; spray an 8 1/2 inch long x 4 1/2 inch wide loaf pans with non-stick spray or line it with parchment paper.

Step 2

In a medium bowl, whisk together the flours, baking powder, baking soda, and salt.

Step 3

In a large bowl, whisk together the sugar and eggs, then whisk in the milk, maple syrup, oil, and almond extract.

Step 4

Gradually stir dry ingredients into wet, being careful not to over-mix.

Step 5

Fold in the oats, almonds and then the blueberries, pour the batter into the prepared pan.

Step 6

Bake 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
