Ingredients

  • 2 cups flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups low-fat buttermilk
  • 1/2 cup melted butter
  • 2 large eggs
  • 1 tbsp vanilla
  • oil/pam for spraying waffle iron

Preparation

Step 1

Heat waffle iron.

Step 2

Mix flour, sugar, baking powder, baking soda and salt; set aside.

Step 3

In another bowl whisk milk, butter, eggs and vanilla. Add to dry ingredients until just combined - waffles don't like to be over-mixed, there should still be some lumps in it.

Step 4

Pour batter onto iron, leaving 1/2" border on all sides - spread it out if necessary.

Step 5

Cook until steam stops, about 3-5 minutes.

If you don't have buttermilk, you can make your own by adding 1 tbsp of vinegar to your milk and letting it sit for 10 minutes.
