Biscotti: Cinnamon-Hazelnut

- 3/4 cup butter
- 1 cup sugar
- 2 eggs
- 1-1/2 tsp vanilla
- 2-1/2 cups flour
- 1 tsp cinnamon
- 3/4 tsp baking powder
- 1/2 tsp salt
- 1 cup hazelnuts

Preparation
Step 1
Heat oven to 350F.
Grease cookie sheet or line with silicone or parchment liner.
Step 2
Cream butter and sugar until light and fluffy. Beat in eggs and vanilla.
Step 3
Sift flour, cinnamon, baking powder, and salt, then mix into eggs. Stir in hazelnuts.
Step 4
Shape dough into 2 logs, 12x2". Bake 30 mins until edges are golden. Remove from oven and turn oven down to 300F.
Step 5
Cool 10 mins. Slice into 1/2-3/4" slices. Return to baking sheet and bake 10 mins, then turn over and bake another 10 mins. They should be lightly golden and dry.
