Preparation

Step 1

Heat oven to 375F.

Step 2

Cream butter and sugar until fluffy. Add cocoa and baking powder. Beat 2 mins. Add eggs one at a time.

Step 3

Stir in flour by hand. Mix in chocolate chips. Form into dough ball. Cover and chill 10 mins.

Step 4

Divide dough in half and roll each into 9" log. Place on greased/lined sheet 4" apart. Flatten and shape into long flat rectangle. Bake 20-25 mins. Remove from oven and lower temp to 325F.

Step 5

Cool loafs on wire rack for 20 mins then slice into 1/2-3/4" thick slices. Place onto ungreased sheets. Bake for 9 mins on each side until dry.

Step 6

Place your cooling racks on top of waxed paper (for easy cleanup). Put your biscotti on the racks.

Step 7

Melt the white chocolate in a double boiler (so it doesn't burn on the element). When totally melted, use a fork or whisk to "fling" and drizzle the chocolate over top of the biscotti.
