Ingredients

  • 2 cups flour
  • 1-1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2/3 cup sugar
  • 6 tbsp butter
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla
  • 1 egg, beaten
  • 3 tbsp white sugar
  • 1 tsp cinnamon

Preparation

Step 1

Heat oven to 325F.

Step 2

Line baking sheet with parchment paper or silicone lining.

Step 3

Sift flour, cinnamon, baking powder and salt. In another bowl cream butter, 2/3 cup sugar. Beat in the whole egg, extra egg yolk and vanilla. Stir in dry ingredients.

Step 4

Divide dough in half. Form into two 9x2" logs on the baking sheet. Wet your hands if dough is too sticky to form well. Brush with beaten egg and bake 20-25 mins until golden.

Step 5

Cool 15 mins. Slice diagonally into 1/2-3/4" thick slices. Place on baking sheet side-down. Sprinkle the remaining sugar and cinnamon over the biscotti (try not to get too much on the actual pan or it will burn and smoke).

Step 6

Return to oven for an additional 15-20 mins. They should be dry and just slightly golden.
