- 2 eggs
- 1 cup vegetable oil
- 2 cups white sugar
- 2 cups flour
- 2 tsp ground cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
- 4 cups peeled, chopped apple

Preparation
Step 1
Heat oven to 350F.
Lightly grease (and flour if desired) a standard square 9x13" cake pan.
Step 2
Beat oil and eggs until foaming a bit. Add the sugar, flour, cinnamon, baking soda, salt and vanilla and beat well.
Step 3
Stir in the fruit with a spoon. Pour batter into the pan.
Step 4
Bake 30-40 mins. Cool cake in pan for 10 mins before removing. Cake needs no frosting but you an dust it with icing sugar or white sugar mixed with cinnamon.
Try serving it warm with vanilla ice cream!
