Ingredients

  • 3 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups sugar
  • 4 eggs
  • 1/ tsp vanilla
  • 1 cup vegetable oil
  • 13oz evaporated milk
  • 1/4 cup poppy seeds
  • Grated rind from 1 lemon
  • Yellow food colouring
  • 2-3 tbsp icing sugar
  • 1 tbsp hot lemon juice

Preparation

Step 1

Heat oven to 350F. Grease and flour a 10" tube pan.

Step 2

In a big bowl mix dry ingredients. Make a well in the centre and add eggs, vanilla, oil and milk. Mix well and fold in the poppy seeds and lemon rind. Add a couple drops of yellow food colouring.

Step 3

Pour into pan. Bake for 1 hour or until a toothpick test is clean. Cool for 10 mins before removing from pan. Cool on wire rack.

Step 4

To make glaze: Heat lemon juice in microwave for a few seconds, then add the icing sugar. If it's not the right consistency to drizzle or the taste needs to be adjusted, add more juice or sugar. Sugar should be totally dissolved. Use toothpick to make holes over the top of the cake. Drizzle or brush glaze onto the cake and cool completely on rack before cutting.
