Ingredients

  • 4 pounds of yellow squash cut into 1/4 inch slices
  • 2 tablespoons of butter
  • 1 large onion finely chopped
  • 2 cloves of garlic pressed
  • 1 10 ounce can of cream of mushroom soup undiluted
  • 2 large eggs
  • 1 cup of shredded sharp cheddar cheese
  • 1 teaspoon of salt
  • half a teaspoon of pepper

Preparation

Step 1

Cook squash in boiling water to cover 8 to 10 minutes or until tender. Drain and press quashed between paper towels to dry.

Step 2

Melt butter in a large skillet add chopped onion and garlic sauteed until tender.

Step 3

Combined the onion mixture squash cream of mushroom soup in remaining ingredients.

Step 4

Spoon into a lightly greased 11x7 baking dish.

Step 5

Bake at 350 for 30 minutes or until bubbly.
