Ingredients

  • 4 zucchini
  • 1 pound ground beef
  • 1 onion
  • 1 garlic clove
  • 1 tsp oregano
  • one quarter cup of grated Parmesan cheese
  • 1 can condensed tomato soup

Preparation

Step 1

Cut zucchini in half lengthwise. Scoop out the seeds and pulp leaving a quarter inch shell.

Step 2

In a frying pan, brown ground beef with chopped onion, minced garlic, and oregano. Drain.

Step 3

Add zucchini pulp, cheese, and a quarter of the soup.

Step 4

Arrange zucchini shells in a shallow baking pan. Spoon meat mixture into shells.

Step 5

Spoon the remaining soup over the shells and sprinkle with additional cheese.

Step 6

Cover and bake 35-40 minutes or until tender. Remove cover during the last 5 minutes.
