- 3/4 Cup real mashed potatoes plain no salt or pepper
- 1 Package 16 oz confectioners sugar
- 4 Cups flaked coconut
- 2 Packages of Bakers semi sweet baking chocolate squares 16 squares

Step 1
Mix mashed potatoes, sugar and coconut together. Roll mixture into small balls and put on cookie sheets covered with wax paper. Chill in refrigerator for 1 hour.
Step 2
Melt chocolate squares on low heat in a double boiler. Be careful not to scorch chocolate.
Step 3
When melted, take a toothpick to pick up balls and dip them into chocolate. Return to wax covered cookie sheets and return to refrigerator. When fully hardened you can store in a container. Best if kept in refrigerator.
You can add chopped nuts or cherries to this if desired. Makes about 3-5 dozen depending on size.
