Ingredients

  • Crust:
  • 2 1/2 c Flour
  • 1/2 c Sugar
  • 2 sticks of Butter softened
  • Filling:
  • 4 Eggs
  • 1 1/2 c sugar
  • 6 Tbsp Lemon Juice
  • 1/4 c Flour
  • 1/2 tsp Baking Powder
  • Confectioners Sugar for dusting.

Preparation

Step 1

Preheat oven to 350
Line 13x9" pan with parchment paper

Step 2

Mix crust ingredients well and press evenly into parchment lined pan. Place in preheated oven for 30 minutes.

Step 3

Place filling ingredients into a mixing bowl and beat on low speed until smooth.

Step 4

Pour mixture into hot crust and put back in oven for 20 minutes or until set.

Step 5

Remove from oven and dust with Confectioner's Sugar. Let cool completely in pan.

Step 6

Carefully remove from pan and cut into squares.
