Eggnog Pie

Ingredients
- 1 pie crust
- 1.5 cups dairy eggnog
- 1 envelope unflavored gelatin
- 1 cup powdered sugar
- 1/4 cup butter
- 16 ounces of cream cheese
- 1/4 teaspoon of ground nutmeg
- 1/2 teaspoon of rum extract
- extra ground nutmeg

Preparation
Step 1
Heat oven to 450. Bake pie crust as directed.
Step 2
Place 1 cup eggnog in saucepan. sprinkle gelatin evenly over the eggnog and let stand for 1 minute to soften. Cook over medium heat stirring constantly until gelatin is dissolved. Remove from heat and set aside.
Step 3
Beat powdered sugar, butter, and cream cheese on low until light and fluffy. Gradually beat in nutmeg, rum extract, gelatin mixture, and remaining 1/2 cup of eggnog on high until smooth.
Step 4
Refrigerate 15 minutes.
Step 5
Pour filling into cooled crust.
Step 6
Refrigerate until firm. Generally around 4 hours. Serve with a sprinkle of nutmeg on top.
