Ingredients
- 1 pie crust
- 1 envelope unflavored gelatin
- 1 cup sugar
- 1/2 cup fresh lime juice
- 1/4 cup water
- 4 pasteurized eggs
- 1 teaspoon grated lime peel
- 2 drops green food coloring
- 1 cup whipping cream
- sweetened whipped cream
Preparation
Step 1
Heat oven to 450. Bake pie crust as directed.
Step 2
Mix gelatin, 1/2 cup sugar, lime juice, water, and egg yolks. Cook over medium heat 6 to 7 minutes. Stir constantly until it boils and thickens slightly. Remove from heat and stir in lime peel and food coloring. Pour into a bowl and refrigerate for 45 minutes.
Step 3
Beat egg whites until peaks form. gradually add 1/2 cup sugar. beat until stiff peaks form.
Step 4
Fold egg whites and whipping cream into cooled mixture. Pour into cooled crust. Refrigerate 2 hours or until firm. Serve with sweetened whipped cream.
