Ingredients
- 1 pie crust
- 1 1/4 cup sugar
- 1/3 cup cornstarch
- 1/2 teaspoon salt
- 1 1/2 cup water
- 3 egg yolks
- 2 tablespoons butter
- 1 tablespoon grated lemon peel
- 1/2 cup fresh lemon juice
- 3 egg whites
- 1/4 teaspoon cream of tarter
- 1/2 teaspoon vanilla
- 1/4 cup sugar
Preparation
Step 1
Heat oven to 450. Bake pie as directed. Cool.
Step 2
Mix 1/4 cup sugar, cornstarch, and salt. Gradually stir in cold water until smooth. Cook over medium heat stirring constantly. Bring to a boil for 1 minute. Remove from heat.
Step 3
Beat egg yolks. Stir in 1/4 cup of hot mixture. Cook over low heat stirring constantly. Boil 1 minute. Remove from heat. Stir in butter, lemon peel, and lemon juice. Cool for 15 minutes.
Step 4
Reduce oven to 350. Pour filling into cooled crust. in small bowl beat egg whites, cream of tarter and vanilla on medium for 1 minute or until soft peaks form. Beat in 1/4 sugar on high until glossy peaks form. Spoon onto hot filling.
Step 5
bake at 350 for 12 to 15 minutes. Cool 1 hour. Refrigerate 3 hours.
