Ingredients

  • 5 lb raw mangoes
  • 1/3 cup cornflour
  • 1/2 cup water
  • 1/2 cup sugar
  • 1/2 cup vinegar
  • 1 tbsp coriander seeds
  • 2 tbsp cumin seeds
  • 1 tsp haldi
  • 1/2 red chili crushed
  • 1/2 tbsp red chili powder
  • 1/2 tsp mustard seeds
  • 1 tsp fenugreek seeds
  • 1 tsp coriander powder
  • For tadka
  • 1/2 cup oil
  • 3-4 green chilies chopped
  • 8-10 curry leaves
  • 1 garlic bulb peeled and chopped
  • 1/2 tsp mustard seeds

Preparation

Step 1

Roast cumin and coriander and then process it into crushed form along with mustard and fenugreek seeds.
keep it aside.

Step 2

Peel and deseed the raw mangoes and cut in cubes. Mix it with red chili powder, haldi, crushed red chili, and crushed masala (mustard seeds, cumin, coriander powder, fenugreek seeds)

Step 3

Dissolve 1/3 cup cornflour into water. Boil 1/2 cup water with 1/2 cup sugar. Add in the dissolved cornflour. when it reaches a normal consistency add in vinegar and the raw mangoes and turn off the heat.

Step 4

Heat oil. add mustard seeds, when start sputtering add curry leaves, green chilies, garlic. When golden brown add the tadka into the mango mixture.

Step 5

Ready to serve. Fill in the jars and refrigerate it for longer use.
