Ingredients

  • 4 lbs. Potatoes
  • 1/2 c. Chopped Onion
  • 2 Cloves Minced Garlic
  • 2 Stalks Finely Chopped Celery
  • 28 oz. Chicken Broth
  • 2 tsp. Salt
  • 1/2 tsp. Pepper
  • 2 c. Half And Half
  • For Garnish Add Shredded Cheddar Cheese, Cooked And Crumbled Bacon, Sliced Green Onions

Preparation

Step 1

Layer cubed potatoes in a lightly greased 5-quart slow cooker. Top with chopped onion, garlic and celery.

Step 2

Add chicken broth, salt and pepper. Broth will not completely cover potatoes.
Cover and cook on low setting for 8 hrs. or until potatoes are tender.

Step 3

Mash mixture with a potato masher, but leave some chunks.

Step 4

Stir in half and half. Cover and cook on high setting 20 more min., or until mixture is thoroughly heated. Ladle into bowls and garnish with favorite toppings.
