Ingredients

  • 1 1/2 cups pitted cherries, fresh, frozen or canned
  • 3/4 cup boiling water
  • 1/2 cup sugar
  • 2 tbsp. butter
  • 1 cup sugar
  • 2 tbsp. butter
  • 1/2 cup cold water
  • 2 tbsp. baking powder
  • 1 1/4 cup flour

Preparation

Step 1

Preheat oven to 375 degrees. Grease and flour a 9 by 9 deep baking dish.
Combine cherries, 1/2 cup sugar and 2 tbsp. butter in a bowl. pour boiling water over mixture until butter has melted. This will make a thin syrup that can be put aside while making the cake batter.

Step 2

In a separate bowl, cream 1 cup sugar and 2 tbsp. butter. Add cold water. (don't panic when the butter and sugar congeals. It will vanish when dry ingredients are added.)

Step 3

Sift together the flour and baking powder. Add the flour to the mixture in the bowl without cherries, stirring constantly, until the batter is thicker then cake batter but not as thick as cookie dough. (humidity effects how much flour to use).

Step 4

Pour the batter first into the prepared pan then pour the cherrie syrup mixture in the first bowl on top of the batter. (Don't mix). Bake 30-35 minutes or until tester comes out clean. Can be served hot or cold.

If cherries are not a favorite try experimenting with different fruits; blueberries, plums, oranges, strawberries, etc. Adding flavors to the syrup can help you make your own creative dessert. Due to the baking powder while all the syrup is sucked into the cake the batter rises and created a yummy crust to reach the filling. Due to baking action use a deep dish or have it on a tray to save you from cleaning up your oven.
