Ingredients

  • 4 Lbs Boned pork roast
  • 3-5 PC of garlic
  • 1 Large pinch of Mexican oregano
  • 1 Tbs of salt
  • 1/2 Onion
  • 1 Large can chile Las Palmas
  • 1 Large can hominy

Preparation

Step 1

Chop the garlic and peel them

Step 2

Chop onions

Step 3

Cut the pork roast into 1 inch cubes

Step 4

Put the cubed pork, oregano, garlic, onion and salt into a large heavy pot

Step 5

Cover with water

Step 6

Boil meat gently for 1 and 1/2 hours

Step 7

When meat is soft add chile and hominy

Step 8

Cook for 30 minutes (until mixture is boiling nicely)

Serve with thinly sliced cabbage, radishes, limes, oregano, chopped onion and fresh corn tortillas
