Coconut Cream Cheese Frosting

Yummy creamy coconutty frosting great for carrot cakes.

Ingredients
- 1 Cup shredded coconut
- 1 1/2 Tablespoon soft butter
- 1/2 package softened Philadelphia brand cream cheese
- 1/4 cup softened butter
- 3 cups icing sugar
- 1 Tablespoon cream
- 1/2 teaspoon vanilla bean paste
- 1/2 teaspoon coconut extract
Preparation
Step 1
Saute coconut in 1 1/2 tablespoons of butter in a frying pan over medium heat until toasted brown in color. Spread on a paper towel to absorb butter and dry out.
Step 2
Cream the cream cheese with the butter and alternately add the icing sugar, milk, vanilla and cocnut extract.
Stir until smooth.
Step 3
Fold in coconut.
Will frost a 9x13 cake or a bundt cake.
